Behind the Biz: Apllada Greek Fusion Restaurant

Apllada Greek Fusion Restaurant has been one of my favourite restaurants since I discovered it over two years ago.  It has everything you want in a restaurant including incredible food, great service / people and a cool space.   And while I love dining in, it's also great for take out and can create a custom menu if you are hosting a large group.  

Today we are going behind the business with one of the owners and chef extraordinaire, Hristina Karunu.  

As someone who's spent years in the food industry, I’ve always been passionate about every part of it—cooking, working with amazing (and sometimes crazy) teams, and even handling the behind-the-scenes stuff like bookkeeping and cleaning. But there was one thing I realized—Hamilton was missing a truly authentic Greek dining experience. So, I decided to open Apllada to bring the real flavors and traditions of Greek cuisine to our community.

A unique feature of our restaurant is our range of vegan options, which might surprise some people. Greek food is naturally filled with plant-based dishes, and we’re proud to offer a menu that showcases this side of Greek cooking.

I’ve always been fascinated by history, which helped fuel my passion for researching Greek cuisine. That love for history is reflected in the care we put into every dish.  Since opening our doors in March of 2022, it’s been an incredible ride!

One of the most memoraable moments so far was when a hockey team from Montreal came to dine with us. After their meal, they asked to meet me and gave me a standing ovation. It was a heartwarming experience that I’ll cherish forever.
